Vegan bolognese over edamame mung bean fettuccini

A protein packed vegan meal!

I have been transitioning to a more vegan diet and looking for interesting recipes that will appease my meat loving husband as well. This recipe for vegan bolognese I found on the Vegan Huggs website was absolutely delicious. With a base of chopped mushrooms and ground walnuts the texture was very hearty and garlic, onions, carrots and nutritional yeast give it a wonderful savory flavor. I topped it on what I must say is one of the best pastas I have ever had. This plant based fettuccini packs 24 grams of protein in a 2oz serving!
